DAY 2 MATCHUP: Eggplant versus\u00a0Beets<\/h3>\n

(voting from March 25th – March 27th @ Midnight PST<\/em>)<\/strong><\/span><\/p>\n

The next matchup is the battle of the purple veggies,<\/strong><\/em> eggplant versus the mighty beets. \u00a0Not the most popular veggies, but these two snuck into the produce playoffs to show off their stuff. \u00a0Here is a breakdown of the two teams:<\/p>\n

Season<\/strong>: Started the season out strong, but they may have hit their peak long before this tourney, August to October.<\/span><\/span><\/p>\n

On the bench<\/strong>: molybdenum, potassium, antioxidants<\/span><\/p>\n

Offense<\/strong>: \u00a0The eggplant’s offense attack is based on their versatility<\/em>. \u00a0The eggplant can be baked, roasted, or steamed and added to sandwiches, pizza, and lasagna for a low calorie filling<\/span>.<\/p>\n

Defense<\/strong>: \u00a0T<\/span>he eggplant’s defense is led by star player fiber<\/em><\/strong>, reducing the risk of heart disease, as well as the low calories fighting off the risk of obesity.<\/span> \u00a0<\/span><\/p>\n

On the bench<\/strong>:\u00a0dynamic duo of antioxidants, vitamin C and manganese<\/span><\/p>\n

Offense<\/strong>:\u00a0The beets are quick <\/em>to cook, just steam for 15 minutes until soft. \u00a0Beets are a great additio<\/span>n to a salad bowl of greens or an easy side dish. \u00a0<\/b><\/p>\n

Defense<\/strong>: The phytonutrients are the star defense players, providing some valuable antioxidant and anti-inflammatory components that are unique only to a few veggies. \u00a0The beets also match up well with the eggplants fiber defense.<\/span><\/p>\n
